A new Mexican restaurant has opened at 2901 W. 25th Ave. in Jefferson Park.
El Cazo, located in a newly built mixed-use building on the corner of 25th and Eliot Street, is the latest addition to the neighborhood’s commercial center that includes other hotspots such as Sarto’s, Sexy Pizza and Jefferson Park Pub.
The restaurant’s name comes from Chef Efren Velasquez’s authentic approach to cooking his carnitas. A Cazo is a deep copper pot with a wide rim and a tapered narrower bottom traditionally used over an open fire to make carnitas, chicharrones, cajetas and an assortment of sweets. Cazos have a rich history in Mexico and often are passed down from generation to generation.
Velasquez grew up in Chihuahua, Mexico, where his mother owned a restaurant. It is from her he acquired his passion for traditional Mexican cooking.
The aesthetic of El Cazo was inspired by the restaurant’s namesake copper pot with the interior showcasing a sophisticated blend of modern design paired with classic brick and copper elements. Large exterior folding glass walls open to create an atmosphere in which diners can enjoy the beautiful Colorado weather.
El Cazo also offers an elevated cocktail menu. House margaritas are made with premium Suerte tequila and fresh-squeezed lime juice. Other drinks include palomas, palmers and a selection of imported and domestic beers.
